Tomato and Crispy Crumb Chicken |

This tasty dish is something all the family will enjoy, or make it for an easy weeknight supper for friends. Ingredients:
4 boneless skinless chicken breasts |
2 slices thick bread |
2 tablespoons dried herbs |
14 ounces chopped tomatoes |
1 garlic clove, crushed |
1 teaspoon balsamic vinegar |
2 teaspoons tomato paste |
salt and pepper |
Directions:
1. Heat the ovem to 375°F Split the chicken breasts almost in half and open out like a book. 2. Place in a non-stick roasting tin. 3. Whizz the bread into crumbs in a food processor, then mix with the herbs. Mix the tomatoes with the garlic, vinegar and tomato paste. 4. Spread the sauce over the chicken, sprinkle with the crumbs then bake for 20-25 minutes until the chicken is tender. 5. Serve with steamed veggies. |
