Serve as part of a tapas selection. The chorizo I buy are around 75g each or 3 oz. Ingredients:
1 1/2 tablespoons olive oil |
2 chorizo sausages, sliced |
250 g cherry tomatoes, halved |
1 small red onion, cut into rings |
1 tablespoon sherry wine vinegar or 1 tablespoon red wine vinegar |
1 tablespoon chopped flat leaf parsley |
lemon juice, 1 squeeze |
Directions:
1. Heat a tiny amount of the olive oil over medium heat and cook the chorizo for 5 minutes or until crisp. 2. Place the chorizo, cherry tomatoes and onion rings in a serving bowl. 3. Whisk the remaining olive oil and vinegar together. Pour over the ingredients in the bowl and toss well. 4. Sprinkle with the parsley and squeeze a little lemon over. 5. Good served with crusty bread to mop up the juices. |
