A tasty and low-fat soup Ingredients:
300 g brown onion |
2 tsp garlic |
1 kg tomatoes |
2 cups chicken stock |
1 tbsp worcestershire sauce |
2 tbsp basil |
600 g chickpeas |
Directions:
1. Heat oiled saucepan. 2. Cook onion and garlic stirring until onion softens. 3. Stir in chopped comato. cook about 3min or until soft. 4. Add stock and sauce, bring to a boil; simmer, covered 15min 5. Blend or process tomato mixture in batches until almost smooth. Return to pan. 6. Stir in drained chickpeas and parsley; simmer, uncovered 5 minutes or until heated through. |
