Tomato and Chickpea Salad |

This is a very filling and quick salad that can be made in a hurry to feed your vegan and non-vegan friends. I have seen similar recipes, but this one is my own invention. Ingredients:
6 medium tomatoes, chopped |
2 (15 ounce) cans chickpeas, drained and rinsed |
6 ounces marinated artichokes, undrained, artichokes quartered |
4 ounces green olives, pitted |
3 tablespoons cilantro, chopped |
1/2 lemon, juice of |
4 tablespoons olive oil (extra virgin is best) |
1/2 teaspoon ground black pepper (or to taste) |
Directions:
1. Put everything, including the liquid from the artichoke jar, together. |
