TOMATO AND BASIL TART This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999. Ingredients:
1-1/2 cups flour |
1/2 cup butter cut into pieces |
1 large egg |
1 cup mozzarella cheese |
4 large roma tomatoes |
1/4 cup slivered fresh basil |
2 tablespoons chopped fresh chives |
3 large eggs lightly beaten |
3/4 cup half and half |
1/2 teaspoon ground mustard |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Position knife blade in food processor bowl then add flour and butter. 2. Process until mixture is crumbly then add 1 egg and process until mixture forms a ball. 3. Press dough on bottom and up sides of a tart pan then prick with a fork. 4. Bake at 350 for 20 minutes then cool completely on a wire rack. 5. Sprinkle mozzarella cheese over prepared pastry shell then top with tomato, basil and chives. 6. Combine 3 eggs and next 4 ingredients then stir well and pour over chives. 7. Bake at 400 for 30 minutes then remove from oven and let cool on wire rack for 10 minutes. |
