Great way to use the ripe tomatoes and basil. Homemade chicken stock gives plus points. Delicious with hearty bread. Ingredients:
1 large onion, coarsely chopped |
1 carrot, grated |
1/4 cup butter |
5 medium ripe tomatoes (about 1 1/2 lbs.), peeled and quartered |
1/4 cup finely chopped fresh basil leaves |
1 teasp. salt |
1/2 tsp freshly ground black pepper |
3/4 tsp sugar (to keep the red color) |
2 cups chicken stock (pref. homemade) |
Directions:
1. In 2 quart saucepan, sauté onion and carrot in butter till onion is soft 2. Stir in tomatoes, basil, salt, pepper and sugar. 3. Cover and simmer 15 min. 4. Puree in a blender until smooth. 5. Return the puree to the saucepan. 6. Add chicken stock and reheat. |
