9 ounces fresh linguine |
1 bunch fresh broccoli, cut into florets |
4 plum tomatoes, seeded and chopped |
3 tablespoons red wine vinegar |
3 tablespoons olive oil |
3 scallions, chopped |
1/4 cup chopped fresh basil |
1/2 teaspoon salt |
1/8 teaspoon pepper |
grated parmesan cheese |
Directions:
1. In a large pot of boiling water, cook linguine and broccoli until just tender, 2-3 minutes; drain well and transfer to a large bowl. 2. Add remaining ingredients, except cheese, and toss with linguini and broccoli. Serve warm or chilled with the cheese. |
