Tomato and Basil Chevre Spread |

A tasty spread to serve with assorted crackers. Do not use oil-packed sun dried tomatoes. Cook time is chill time. Ingredients:
1/3 cup sun-dried tomato (not oil-packed) |
boiling water |
4 ounces soft fresh goat cheese (chevre) |
4 ounces neufchatel cheese, softened |
1/4 cup fresh basil, finely chopped (or 2 teaspoons dried basil, crushed) |
3 garlic cloves, peeled and minced |
1/8 teaspoon ground black pepper |
2 -3 tablespoons milk |
Directions:
1. In a small bowl, cover tomatoes with boiling water. Let stand 10 minutes. Drain and discard liquid. Finely chop tomatoes. 2. In a medium bowl, stir together tomatoes, cheeses, basil, garlic and pepper. Stir in enough milk to reach a spreading consistency. 3. Cover and chill for at least 2 hours (up to 8 hours). 4. Serve with assorted crackers. |
