Tomato and Basil Bruschetta |

Wonderful, fresh tasty Bruschetta. Like we had in Italy....maybe even better!! Ingredients:
8 slices bread (a heavy, dense bread is best, ciabatta is good) |
2 tablespoons olive oil |
2 garlic cloves, halfed |
2 -4 small tomatoes, diced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
8 leaves basil, sliced into very thin strips |
2 tablespoons olive oil |
1 garlic clove, finely minced |
2 tablespoons parmesan cheese |
Directions:
1. Brown 8 - 10 or so slices of bread in a skillet with olive oil. Placed browned bread slices on a plate, rub each side of the bread with a garlic half - try to get the garlic scraped on the bread. In a small bowl combine the tomato dices, salt, pepper and olive oil, and garlic - top the toast slices with the tomato mixture. Top with the basil, and then top with parm. cheese. Serve immediately. |
