A cool and creamy pasta salad perfect for summer picnics! Ingredients:
8 oz macaroni |
1/2 lb bacon |
1/2 c. mayo |
1/4 c. sour cream |
2 celery stalks diced |
1/2 cucumber (de-seeded and diced) |
1 tomato (de-seeded and diced) |
3 hard boiled eggs diced |
2 tbsp cider vinegar |
2 tbsp sugar |
1 tbsp mustard |
1/4 tsp each salt and pepper |
Directions:
1. Cook the bacon until it is crispy, drain on paper towels 2. Cook the noodles according to directions and rinse lightly with cold water. 3. Whisk together the mayo, sour cream, sugar, vinegar, mustard, salt and pepper. 4. Crumble the bacon. 5. Add all the ingredients and stir to combine. 6. Best when left overnight to let the flavors develop. |
