This is a fantastic salsa verde that I found on the internet. I'm putting it here for safe keeping. It just takes minutes to put together and is so good! Ingredients:
1 1/2 lbs tomatillos |
1/2 cup white onion, chopped |
1/2 cup cilantro leaf |
1 tablespoon fresh lime juice |
1/4 teaspoon sugar |
2 jalapeno peppers, stemmed, seeded and chopped |
salt |
Directions:
1. Remove papery husks from tomatillos and rinse well. 2. Cut in half and place cut side down on a foil-lined baking sheet. 3. Place under a broiler for about 5-7 minutes to lightly blacken the skin. 4. Place tomatillos, lime juice, onions, cilantro, jalapeno peppers and sugar in a blender (or food processor) and pulse until all ingredients are finely chopped and mixed. 5. Season to taste with salt. 6. Keep in refrigerator. 7. Serve with chips or as a salsa accompaniment to Mexican dishes. |
