This salad is a great dip for low-fat tortilla chips. Ingredients:
2 cups chopped tomatillos (about 12) |
1/3 cup chopped fresh cilantro |
1/4 cup chopped green onions |
1/2 teaspoon salt |
1/2 teaspoon ground cumin |
2 (4 1/2-ounce) cans sliced ripe olives, drained and chopped |
1 red bell pepper, chopped |
1 (15-ounce) can black beans, rinsed and drained |
Directions:
1. Combine first 7 ingredients in a medium bowl, stirring well. Add beans, and toss gently. |
