Ingredients:
2 cups diced fresh tomatillos (about 4 large) |
1/2 cup diced onion |
1/2 cup diced celery |
1/4 cup chopped green bell pepper |
2 garlic cloves, minced |
1 tablespoon plus 1 teaspoon olive oil |
1/2 cup clam juice or chicken broth |
1/4 cup canned chopped green chiles |
1/4 cup lime juice |
1 teaspoon ground cumin |
1/2 teaspoon dried oregano |
1/4 teaspoon salt |
1/4 teaspoon ground red pepper |
1 teaspoon chopped fresh cilantro |
Directions:
1. Sauté first 5 ingredients (tomatillo through garlic) in hot olive oil in a skillet for 5 minutes. Add clam juice and next 6 ingredients (chiles through red pepper); cover, reduce heat, and simmer, stirring occasionally, 15 minutes. Remove from heat, and keep warm. Stir in cilantro. |
