this recipe makes 1 1/2 cups of salsa ... you can make it as hot or mild as you like by adjusting the jalapeno. this is good served with tortilla chips or with the Blue cornmeal fritters Ingredients:
6 mild green chili peppers ( 3/4 pound ) |
1/4 cup firmly packed cilantro leaves |
1 green onion , coarsely chopped |
2 tbsp. lime juice |
3/4 pound fresh tomatillos |
2 tbsp. olive oil |
1 jalapeno pepper, seeded and minced.... for more heat add more |
2 medium cloves garlic, minced |
Directions:
1. place green chilies on broiler pan 2. roast peppers 2-inches from the heat 3. turn until all sides are charred 4. place in plastic or paper bag ..close end 5. let stand until cool enough to handle 6. remove charred peel with sharp knife 7. remove the seeds and the stems.. reserve any juices 8. place peppers and juices in food processor 9. add cilantro, chopped green onion, lime juice and salt to taste 10. puree and set aside 11. tomatillos .. remove husks rinse and dry 12. core and chop 13. in medium skillet.. heat olive oil over medium heat saute tomatillos, jalapeno and garlic 14. cook until tomatillos are tender ...about 3 minutes 15. stir in chili puree 16. cover and let flavors meld... 17. makes 1 1/2 cup salsa |
