Tomates Provencal (Baked Tomatoes With Garlic) |

These tomatoes make a nice, refreshing side for a heavy dish like roast beef. It pairs pretty well with other meats and poultry, though, too. Ingredients:
2 large tomatoes |
3 tablespoons dry breadcrumbs |
3 garlic cloves, minced |
2 tablespoons fresh parsley, chopped (2 tsp. if using dried) |
3 tablespoons olive oil |
salt and pepper, to taste |
Directions:
1. Preheat the oven to 425°F Cut the tomatoes in half horizontally and place them cut side up on a baking sheet. 2. Mix the breadcrumbs, garlic, parsley, salt, and pepper, then spoon the mixture over the tomato halves. Drizzle with olive oil, then bake for about 10 minutes, until lightly browned. Serve hot. |
