A simple tomato salad with cognac. Adults only! Adapted from House and Garden's New Cookbook. Cook time is standing time. Ingredients:
5 -6 beefsteak tomatoes, peeled and thinly sliced |
1/3 cup olive oil |
1 teaspoon salt |
1 tablespoon fresh basil, finely chopped |
1 tablespoon parsley, finely chopped |
1 teaspoon lemon zest, grated |
2 tablespoons cognac |
Directions:
1. Spread tomato slices on a serving plate. 2. Combine remaining ingredients and drizzle over tomatoes. 3. Let stand 15 minutes. |
