Country singer and songwriter Tom T Hall not only made music for the ears, he can make up a dish to make the mouth water! Ingredients:
14 to 15 large red potatoes |
1/2 c. chopped parsley |
1/2 c. chopped scallions |
3 large garlic cloves, sliced |
1 heaping t salt |
1/2 tsp. dry mustard |
1 scant tbs. sugar |
1 tbs. worcestershire sauce |
one 8-oz. bottle pure olive oil |
4 oz. tarragon vinegar |
Directions:
1. Boil potatoes. When done, peel and cut in half-inch chunks. Sprinkle parsley and scallions over potatoes. Combine all remaining ingredients and let stand at least one hour if a more pronounced garlic taste is desired. Strain so there will be no garlic pieces in the sauce. Pour over potatoes, stir well. Let stand all day or at least four hours or more. Stir every hour. Do not refrigerate |
