Tofu Veggie And Almond Stir Fry |

Quick stir fry with veggies served on brown rice Ingredients:
1/2 block of firm tofu ( can substitute chicken) cubed |
2 tbsp almonds |
1 large onion ( sliced) |
1-2 carrots ( sliced) |
frozen green beans |
frozen peas |
2 cloves chopped garlic |
1 tbsp chopped ginger |
1 tbsp chilli powder ( suit to taste) |
2 eggs |
soy sauce |
cooked rice |
Directions:
1. Heat skillet medium heat and thaw frozen green beans and peas for a couple minutes.take out into bowl 2. add oil to pan add fry cubed tofu until fried on all sides...take out into bowl 3. add more oil if needed...fry carrots...2 minutes 4. add onions....once slightly golden 5. add slivered almonds 6. add ginger 7. add garlic 8. add green beans and tofu 9. add chilli powder 10. add 2 eggs and stir into mix 11. add soy sauce to suit taste |
