Main meal. 30mins to eat. Ingredients:
1 tablespoon of olive oil |
1 tablespoon of thai curry paste |
1 cup of fat free milk |
300 grams of firm tofu |
300 grams of pumpkin |
150 grams of string beans |
1 zucchini |
Directions:
1. Drain tofu on kitchen paper. Cut into cubes. Heat oil and fry curry paste. Stir in milk and coconut essence. Simmer for 5 mins. Add tofu and vegetables and simmer gently for 15 mins. Sprinkle with chopped mint or basil. Serve with noodles or rice. |
