This was my breakfast this morning. If you camp, this is great over the fire in cast iron skillet. Both ways good with bisquits or skillet cornbread. Great with added anchovies or capers. Ingredients:
half package of soft tofu cut into chunks |
2 eggs |
1 cup julliened sweet onions |
1 -2 slice roasted red pepper julliened |
olive oil spray or butter spray |
salt |
white pepper |
pinch chili powder or as much as you want |
optional: anchovies or capers |
Directions:
1. I made this on my counter-top 'griddle' 2. spray liberally with your choice of the sprays 3. sweat onions and peppers 4. add tofu I like to get mine a little brown but stir til mixed 5. choice: either scramble your eggs before 6. or crack onto grill and mix them there 7. season when done 8. Old fogie tip:( that means you can take it or leave it) 9. Unplug grill before eggs are done and they will finish cooking with the heat off'. Season at the end with salt pepper and chili. |
