2 -3 tablespoons extra virgin olive oil |
1 garlic clove, minced |
1/2 teaspoon ground ginger |
1/2 teaspoon chili powder |
1/2 green bell pepper, seeded and chopped |
1 cup sliced mushrooms |
4 tomatoes, chopped |
1 lb firm tofu, drained well and cut into bite-size pieces |
tamari, to taste |
fresh ground pepper, to taste |
4 corn tortillas, warmed |
Directions:
1. Heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes, until softened. 2. Add the garlic and spices, stir, and cook for 1 minute. 3. Add the pepper and mushrooms, stir-frying until tender-crisp. 4. Add the tomatoes and slices of tofu. 5. Gently stir-fry for 3 to 4 minutes. 6. Sprinkle with the tamari sauce and season with fresh pepper and chives. 7. Serve on a warm plate with a warm tortilla. |
