Ingredients:
2 -3 tablespoons extra virgin olive oil
1 garlic clove, minced
1/2 teaspoon ground ginger
1/2 teaspoon chili powder
1/2 green bell pepper, seeded and chopped
1 cup sliced mushrooms
4 tomatoes, chopped
1 lb firm tofu, drained well and cut into bite-size pieces
tamari, to taste
fresh ground pepper, to taste
4 corn tortillas, warmed
Directions:
1. Heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes, until softened.
2. Add the garlic and spices, stir, and cook for 1 minute.
3. Add the pepper and mushrooms, stir-frying until tender-crisp.
4. Add the tomatoes and slices of tofu.
5. Gently stir-fry for 3 to 4 minutes.
6. Sprinkle with the tamari sauce and season with fresh pepper and chives.
7. Serve on a warm plate with a warm tortilla.
