Prep: 5 minutes Ingredients:
8 ounces extra-firm tofu |
1/4 cup reduced-calorie salad dressing (such as miracle whip light) |
1 tablespoon dill pickle relish |
1 teaspoon prepared mustard |
1/8 teaspoon salt |
1/8 teaspoon dried dill |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Press tofu between paper towels to remove excess moisture; cut into 1/4-inch cubes. 2. Combine salad dressing and next 5 ingredients in a medium bowl, stirring until blended. Add half of tofu, mashing with the back of a large spoon. Add remaining tofu, stirring gently. |
