From the Veganomicon. Use instead of ricotta or cottage cheese in lasagna. (Even my picky, non-veg in laws can't tell the difference). Ingredients:
1/2 cup cashews |
1 tbsp lemon juice, fresh squeezed |
2 cloves garlic |
1 lb firm tofu, drained and crumbled |
1 1/2 tsp basil, dried |
1 tsp salt |
Directions:
1. Mix everything in food processor except tofu. 2. Add crumbled tofu in 2-3 batches and blend until thick and creamy. |
