Tofu and Vegetables served with Whole Wheat Penne pasta. Ingredients:
1 large eggplant, cut into cubes |
1 zucchini |
3/4 cup onion |
1/2 red bell pepper |
3 cloves of garlic cloves |
14 1/2 oz diced tomatoes |
1 tbsp olive oil |
1 cup cilantro |
1 lb tofu |
2/3 cup organic chicken broth |
2 tsp sesame seeds |
Directions:
1. Take a large pot and heat the oil in it. Put in the onions and stir-fry until it softens. Then, add the garlic and cook for about a minute. Next, add the rest of the ingredients, except for the tomatoes, which should be added last. Cover the pot and allow it to simmer for about 20 to 30 minutes. |
