Japanese Meals on the Go – Bento Boxes by Naomi Kijima Ingredients:
1 aburage (tofu puff) |
1 ounce enoki mushrooms |
1 egg, beaten |
1 tablespoon soy sauce |
1 tablespoon mirin |
1 tablespoon sake |
1 teaspoon sugar |
1/3 bunch mitsuba, chopped |
1/3 cup dashi stock |
Directions:
1. Rinse the aburage with boiling water, julienne. 2. Remove the root base of the enoki and chop. 3. Put the liquid ingredients, sugar and tofu puff in a shallow pan and cook for 2-3 minutes. 4. Add the enoki and cook for 1 minute. Add the mitsuba. 5. Stir in the egg and shake gently until almost set. |
