This is great served with a roasted vegetable salad. Ingredients:
300 g silken tofu, drained and cubed |
1 tablespoon bottled basil pesto |
2 tablespoons white wine vinegar |
Directions:
1. Place all ingredients in food processor. 2. Pulse till smooth. 3. Season with black pepper. 4. Cover and chill till needed. |
