This is a rich protein food for start your day. Serve with whole-wheat toast for your breakfast. Ingredients:
1 tube egg tofu/ japanese tofu |
2 eggs, beaten |
1 slice cheese |
1 tablespoon butter |
salt |
pepper |
Directions:
1. Mash tofu and season with salt and pepper 2. Melt the butter in a skillet 3. Pour beaten eggs swishing it around quickly. Covering bottom of the skillet. 4. Add cheese and tofu. Cook over medium hihg heat until cheese melts. 5. Fold in half. |
