Tofu, Kale, and Raisins

By Debra Wasserman Use a different dark leafy green, dried fruit and or juice.
Ingredients:
1 lb firm tofu
4 cups finely shredded kale
1 cup raisins
1/2 teaspoon coriander
1/2 cup orange juice
Directions:
1. Drain [press] and chop the tofu into 1 inch cubes.
2. You can also marinate it overnight in your juice or favorite dressing.
3. If you choose to use silken use extra firm and do not press but do drain.
4. Saute in a large frying pan over med heat for 8 minutes.
5. Serve warm.
