Tofu Fried Rice with Cabbage |

Cook and chill the rice the night before, so it will be ready ahead of time. Ingredients:
1 tablespoon vegetable oil |
1 (12.3-ounce) package extra-firm light tofu, drained and cut into 1/2-inch cubes |
3 cups thinly sliced napa (chinese) cabbage (about 3/4 pound) |
3 cups chilled cooked long-grain rice |
3 tablespoons low-sodium soy sauce |
2 teaspoons dark sesame oil |
1/2 cup frozen green peas, thawed |
2 tablespoons thinly sliced green onions |
1/4 teaspoon salt |
Directions:
1. Heat vegetable oil in a large nonstick skillet over medium-high heat. Add tofu cubes; cook 9 minutes or until golden brown, stirring occasionally. Remove tofu from pan. 2. Add cabbage to pan; cook 45 seconds or until cabbage wilts, stirring constantly. Stir in rice, soy sauce, and sesame oil. Reduce heat, and cook 2 minutes or until hot, stirring occasionally. Stir in tofu, peas, green onions, and salt; cook 3 minutes or until thoroughly heated, stirring occasionally. |
