A simple stir fry with lots of flavours Ingredients:
125 g tofu, cubed |
1 teaspoon olive oil |
1 clove garlic, chopped |
1/4 oz (root) ginger, chopped |
3 scallions (spring onions), chopped |
1 courgette, diced |
1/2 red pepper, diced |
2 oz peas |
2 tsps soy sauce |
1 tsp sesame oil |
1 1/2 oz brown basmati rice, uncooked weight |
Directions:
1. Cook the rice according to the packet instructions, drain and reserve. 2. Heat the olive oil in a non-stick wok and add the garlic, ginger and spring onions. Allow to stir-fry for a few seconds. 3. Add the tofu and stir fry until a little coloured 4. Add the vegetables and stir-fry until tender - about 4 mins 5. Finally, stir in the cooked brown rice, soy sauce and sesame oil. 6. Serve immediately. |
