Healthier creamed spinach Ingredients:
1/4 c onion |
1 tsp garlic |
9 oz spinach (1 bag) |
6 oz extra firm tofu |
1/2 c skim milk |
1/4 c parmesan cheese |
Directions:
1. Pam skillet-add onion and garlic-cook till soft 2. Add spinach-cook-stirring often-till wilted 3. Place tofu milk and cheese in blender-puree till smooth 4. stir pureed tofu into spinach 5. cook till warmed through 6. serve |
