Quick Tofu Cranberry Nut Muffins Ingredients:
1/4 cup whole wheat flour |
1/4 cup soy flour |
1/2 cup oatmeal |
4 ounces soft tofu |
1 egg |
1/4 cup oil |
1/4 cup honey |
1/3 cup chopped pecans |
1/3 cup craisin dried cranberries |
3/4 teaspoon cinnamon |
1/4 teaspoon salt |
1 teaspoon baking powder |
1/8 teaspoon baking soda |
Directions:
1. mix all ingredients until blended. Do not overmix. 2. fill 6 large muffin cups 2/3 full. 3. bake 375ยบ for 15 min or until done. |
