Delicious, untraditional chili with tofu instead of meat. Ingredients:
6 ounces extra firm tofu |
2 t chili powder |
2 garlic cloves, minced |
2 t vegetable oil |
1 small onion, chopped |
1/2 c bell peppers, chopped |
1/2 c corn |
14 1/2 ounces kidney beans |
14 1/2 ounces stewed tomatoes |
1/2 t cayenne pepper |
Directions:
1. Dice tofu and combine in a bowl with chili powder and garlic. 2. Heat oil in a saucepan. Saute onion and beller peppers. Stir in tofu and cook about 5 minutes over medium heat. 3. Mix in corn, beans, and stewed tomatoes. Season with cayenne pepper and bring to a boil. 4. Reduce to low heat and let simmer for one hour, adding water as necessary for desired thickness. |
