Tofu Chicken Sausage Breakfast Scramble

A regular Sunday brunch item.
Ingredients:
1 tsp olive oil
6 corn tortillas
1 link chicken cilantro sausages
8 oz diced green chilies (large can)
1/2 cup sliced zucchini
12 oz organic silken tofu
1/2 tsp turmeric
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
1/2 cup chopped cilantro
Directions:
1. Cut tortillas into strips and lightly fry in a large pan until leathery and some are crisp. Take out and keep warm in oven.
2. Chop up chicken sausage (we use Trader Joe's Cilantro sausage) and fry. Add green chilies. Set aside.
3. Saute zucchini. Set aside
4. Add spices to tofu.
5. Combine 1/2 tortillas, sausage, chilies, zucchini and tofu. Cook 10 minutes. Then add the rest of the tortillas and the cilantro and serve.
