A quick, delicious supper. Great served over a bed of basmati rice. Ingredients:
2 t oil |
1 large onion, finely chopped |
3 cloves garlic, crushed |
1 dash red chili sauce |
1 tsp grated ginger |
1 block firm organic tofu |
half a head of broccoli florets |
1/3 c. cashews |
4 t soy sauce |
2 t toasted sesame oil for garnish |
Directions:
1. Heat the oil in a frying pan or wok. 2. Add the onion, garlic; stir for two minutes. Don't let the garlic burn. 3. Add the tofu and broccoli (or substitute/add bok choy or any other greens you have on hand) 4. Mix in the fresh ginger, chili sauce, and soy sauce. 5. Heat ingredients well until the broccoli is tender-crisp. 6. Throw in the cashews and stir until heated through, about one minute. 7. Remove from heat and garnish with the sesame oil. Hint: sesame oil's flavour is best as a garnish for a dish - don't cook it. |
