Ingredients:
1/2 cup silken tofu |
2 tablespoons lemon juice |
6 slices toasted french bread |
1/2 cup diced avocado |
2 teaspoons extra-virgin olive oil |
Directions:
1. Coarsely chop 1/2 cup silken tofu and season with about 2 tablespoons lemon juice, and salt and pepper to taste. Mound onto 6 slices toasted French bread, top with about 1/2 cup diced avocado and, if you like, chopped roasted red pepper. Drizzle with a total of 2 teaspoons extra-virgin olive oil and more lemon juice to taste. 2. Nutritional analysis per piece. |
