Tofu and Vegetable Stir-Fry Over Couscous

A fast supper
Ingredients:
1 cup whole wheat couscous
14 1/2 ounces chicken broth
16 ounces firm tofu
4 teaspoons sesame oil, divided
1 tablespoon vegetable oil
2 stalks celery, sliced
4 ounces mushrooms, sliced
2 carrots, sliced
4 ounces sliced green pepper
4 ounces sliced red pepper
3 green onions, sliced
2 tablespoons sesame seeds
Directions:
1. Bring chicken broth to a boil. Add 1 cup of couscous. Cover pan and remove from heat. Let sit until the rest of the meal is ready.
2. Drain the tofu. Cut into 1 inch cubes. Put 2 teaspoons of sesame oil in a non-stick skillet over medium heat. Add tofu. Fry until tofu is warm, lightly browned and crispy.
3. While the tofu fries prepare the vegetables. Heat vegetable oil and remaining 2 teaspoons sesame oil in a non-stick skillet. Add the vegetables and stir until tender-crisp. Sprinkle with seame seeds and saute for a few minutes more.
4. Mix tofu with vegetables and serve over couscous.
