Tofu and Vegetable Stir-Fry Over Couscous |

A fast supper Ingredients:
1 cup whole wheat couscous |
14 1/2 ounces chicken broth |
16 ounces firm tofu |
4 teaspoons sesame oil, divided |
1 tablespoon vegetable oil |
2 stalks celery, sliced |
4 ounces mushrooms, sliced |
2 carrots, sliced |
4 ounces sliced green pepper |
4 ounces sliced red pepper |
3 green onions, sliced |
2 tablespoons sesame seeds |
Directions:
1. Bring chicken broth to a boil. Add 1 cup of couscous. Cover pan and remove from heat. Let sit until the rest of the meal is ready. 2. Drain the tofu. Cut into 1 inch cubes. Put 2 teaspoons of sesame oil in a non-stick skillet over medium heat. Add tofu. Fry until tofu is warm, lightly browned and crispy. 3. While the tofu fries prepare the vegetables. Heat vegetable oil and remaining 2 teaspoons sesame oil in a non-stick skillet. Add the vegetables and stir until tender-crisp. Sprinkle with seame seeds and saute for a few minutes more. 4. Mix tofu with vegetables and serve over couscous. |
