Tofu and Vegetable Stir Fry |

Protein, veggies, Iron. What could be better and tastier? Ingredients:
375 g silken tofu, cut into 2cm cubes |
1/4 cup soy sauce, salt reduced |
1 tablespoon ginger, minced |
1 teaspoon sesame oil |
1 red onion, sliced |
1 cup snow peas |
1 cup broccoli |
1 red pepper |
2 tablespoons blackstrap molasses |
2 tablespoons sweet chili sauce |
Directions:
1. Place tofu in a ceramic or glass dish. 2. combine soy sauce and ginger and pour over tofu. 3. Leave to marinate, turning occasionally for 20 minutes. 4. Heat sesame oil in the wok. 5. Add onion and stir fry for 2 minutes. 6. Add Snow Peas, broccoli, red pepper, molasses and stir fry for 4 minutes or until vegetables are tender but crisp. 7. Add tofu, marinade and chili sauce and stir fry for a further 2 minutes. |
