This is a tasty alternative for vegans or non-ovo vegetarians. Play around with it to get the flavor you like. Ingredients:
8 slice whole-wheat bread |
2 cup firm tofu |
2 tbsp diced white onion |
2 tbsp dijon mustard |
2 tbsp capers |
1 tsp salt |
1 tsp ground pepper |
3 tbsp pickle relish |
1 small tomato |
1/4 cup of lettuce |
1/2 tsp curry powder |
Directions:
1. Prepare this the way you would egg salad. Just remember to squeeze your tofu until the consistancy is dry and crumbly. Also, I prefer to toast my bread. |
