A great cookie to go with milk. From the Quick Cooking Magazine. Ingredients:
3/4 cup butter, softened (no substitutes) |
1 cup packed brown sugar |
3/4 cup sugar |
2 eggs |
3 teaspoons vanilla extract |
2 1/4 cups all-purpose flour |
2 1/4 cups old fashioned oats |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 (10 ounce) package english toffee bits or 1 (7 1/2 ounce) package almond brickle chips |
Directions:
1. In mixing bowl, cream butter, and sugars. 2. Add eggs, one at a time, beating well after each addition. 3. Beat in vanilla. 4. Combine the flour, oats, baking soda, baking powder and salt; gradually add to creamed mixture. 5. Stir in toffee bits. 6. Drop by rounded tablespoonfuls 2 in. 7. apart onto ungreased baking sheets. 8. Bake at 375 for 10-12 min. 9. or until golden brown. 10. Cool for 1 min. 11. before removing to wire racks. |
