Delicious, fairly easy, and good for you because rhubarb is a vegetable which is why you should top it with vanilla ice cream. Ingredients:
2 lbs rhubarb, cut to 3/4-inch thickness |
1 cup sugar |
3/4 cup flour, divided |
1/2 cup butter, cold, cut into pea-size pieces |
1/2 cup brown sugar, packed |
1 cup rolled oats |
1/2 teaspoon ground cinnamon |
Directions:
1. Preheat oven to 400 degrees Fahrenheit. 2. Combine rhubarb, white sugar, and 1/4 cup of the flour in a greased 9 x 13 pan. 3. In a separate bowl, combine 1/2 cup flour, butter, brown sugar, rolled oats, and cinnamon; gently mix to combine. 4. Sprinkle on top of the rhubarb. 5. Bake for 35 to 45 minutes or until rhubarb is tender. 6. Serve hot. |
