Toddler Approved Non-Dairy French Toast Sticks

My 3 year old daughter will eat as much of this as an adult :) She is lactose intolerant and so I try to avoid making stuff with milk in it. I always have these ingredients on hand!
Ingredients:
2 slices white bread (or texas toast)
1 egg
1/3 cup vanilla soymilk
1/4 teaspoon cinnamon
1 teaspoon brown sugar
cooking spray
syrup
powdered sugar
Directions:
1. Cut the bread slices into long thirds.
2. Beat the egg, milk, cinnamon, and sugar together in a small bowl.
3. Spray a medium sized skillet with cooking spray and turn on medium-high heat.
4. Place the bread in the egg-milk wash for 30 seconds, then flip over for 30 seconds.
5. Put in pre-heated skillet and cook about two minutes per side, or until just lightly starting to brown.
6. Sprinkle with powdered sugar and serve with a little bowl of syrup for dipping.
