TOASTY WALNUT MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984. Ingredients:
2 tablespoon quick cooking rolled oats |
1/4 cup unbleached flour |
1 tablespoon sugar |
1/2 teaspoon baking powder |
1/8 teaspoon ground cinnamon |
1 large beaten egg yolk |
1 tablespoon cooking oil |
1 tablespoon milk |
2 tablespoons broken walnuts toasted |
1 tablespoon raisins |
1 teaspoon unbleached flour |
1/2 teaspoon brown sugar |
1/2 teaspoon butter |
Directions:
1. Stir together oats and 1 tablespoon warm water then allow to stand 5 minutes. 2. Meanwhile stir together 1/4 cup flour, sugar, baking powder, cinnamon and salt. 3. Stir egg yolk, oil and milk into oat mixture then add to dry ingredients stirring just until moist. 4. Fold in 5 teaspoons of the walnuts and raisins. 5. Line two 6 ounce custard cups with paper baking cups and fill 2/3rd full. 6. Combine 1 teaspoon flour, brown sugar, butter and remaining walnuts. 7. Sprinkle atop muffins then microwave uncovered on 100% power for 1-1/2 minutes. 8. Remove from custard cups then allow to stand on wire rack for 5 minutes then serve warm. |
