I found a can of coconut milk when I was grocery shopping. After a trip to a local ice cream shop and tasting their Toasted Coconut flavor, I was inspired to try my own...without going back to the store! Ingredients:
1 (13 1/2 ounce) can coconut milk |
1 (14 ounce) can sweetened condensed milk |
1 cup 2% low-fat milk |
1 cup sweetened flaked coconut |
8 mini almond joy candy bars |
Directions:
1. Whisk together first three ingredients until mostly smooth. 2. Pour into ice cream maker and follow manufacturer's instructions. 3. Toast coconut in hot oven or dry skillet until golden brown. Allow to cool. 4. Chop candy bars in food processor. 5. After ice cream maker is finished, fold in toasted coconut and chopped candy bars. Freeze 4 hours or overnight. |
