Toaster Waffles with Lemon-Ginger Berry Sauce and Sweet Yogurt |

Dress up frozen waffles with a delicious fruit sauce and easy yogurt topping. Ingredients:
1 (12-ounce) carton plain 2% reduced-fat greek yogurt |
6 tablespoons sugar, divided |
1 tablespoon vanilla extract, divided |
4 cups frozen unsweetened mixed berries |
1/4 cup water |
2 teaspoons cornstarch |
2 teaspoons grated peeled fresh ginger |
1/2 teaspoon grated lemon rind |
8 frozen gluten-free waffles |
Directions:
1. Combine yogurt, 1/4 cup sugar, and 2 teaspoons vanilla, stirring with a whisk. Set aside. 2. Combine berries and remaining 2 tablespoons sugar in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Combine 1/4 cup water and cornstarch in a small bowl, stirring until smooth; stir into berry mixture. Cook 1 minute or until thickened. Remove from heat; stir in remaining 1 teaspoon vanilla, ginger, and lemon rind. Cover and keep warm. 3. Toast waffles according to package directions. Serve waffles with berry sauce and yogurt mixture. |
