Toaster Waffles with Lemon-Ginger Berry Sauce and Sweet Yogurt

Dress up frozen waffles with a delicious fruit sauce and easy yogurt topping.
Ingredients:
1 (12-ounce) carton plain 2% reduced-fat greek yogurt
6 tablespoons sugar, divided
1 tablespoon vanilla extract, divided
4 cups frozen unsweetened mixed berries
1/4 cup water
2 teaspoons cornstarch
2 teaspoons grated peeled fresh ginger
1/2 teaspoon grated lemon rind
8 frozen gluten-free waffles
Directions:
1. Combine yogurt, 1/4 cup sugar, and 2 teaspoons vanilla, stirring with a whisk. Set aside.
2. Combine berries and remaining 2 tablespoons sugar in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Combine 1/4 cup water and cornstarch in a small bowl, stirring until smooth; stir into berry mixture. Cook 1 minute or until thickened. Remove from heat; stir in remaining 1 teaspoon vanilla, ginger, and lemon rind. Cover and keep warm.
3. Toast waffles according to package directions. Serve waffles with berry sauce and yogurt mixture.
