Toasted Rice and Pasta Pilaf |

This is a really tasty, simple side dish that complements a wide variety of main dishes. This has been in my main recipe file for over 20 yrs. Made with ingredients everyone usually has on hand. Ingredients:
1 tablespoon oil |
3/4 cup long grain rice, white |
2 ounces vermicelli, broken into 1-inch lengths |
1 small onion, finely chopped |
1 (14 ounce) can chicken broth |
1 bay leaf |
1/4 cup chopped parsley |
Directions:
1. Heat oil in med pan over med. heat. Add rice and spag. cook stirring constantly until golden brown; 3-5 minutes. 2. Add onion and cook stirring 3 mins longer. Add broth and bayleaf. Bring to a boil. Lower heat, and simmer covered until rice is tender and broth is absorbed; 15-17 minutes Remove from heat, discard leaf. Fluff with fork, stir in parsley. |
