Toasted Barley With Mushrooms |

I got this recipe when I was on Weight Watchers. It is high in fiber, so we tucked in. Ingredients:
2/3 cup barley |
4 cups boiling water |
2 beef bouillon cubes |
3 tablespoons margarine |
1/4 lb mushroom |
1/8 cup scallion |
1 garlic clove, minced |
1/2 teaspoon salt |
1/4 teaspoon thyme |
pepper |
Directions:
1. Preheat oven to 350. 2. Toast the barley - shaking the pan occasionally so it doesn't burn. 3. Add the barley to the water. 4. Add the bouillion and boil for 1 hour. 5. Meanwhile, saute the mushrooms, scallions, and garlic for 3-5 minutes. 6. Drain the barley. 7. Add barley to mushrooms and season with salt, thyme, and pepper to taste. 8. Cook an additional 2-3 minutes. |
