Toasted Almond Muffin Ingredients:
2 1/2 cups all-purpose baking mix |
1 1/2 cups (12 oz. can) evaporated milk |
1 cup granulated sugar |
1/3 cup vegetable oil |
1 egg |
1 cup sliced almonds, divided |
1 cup sifted powdered sugar |
1-2 tbsp.(s) orange juice |
Directions:
1. Combine baking mix, evaporated milk, sugar, oil and egg in large mixer bowl 2. Beat at high speed for 30 seconds until blended 3. Fold in 3/4 cup almonds 4. Spoon batter into 18 paper lined or greased muffin cups, filling each 2/3 full 5. Bake in preheated 375 degree oven for 15-18 minutes or until wooden pick inserted in center comes out clean 6. Remove to wire racks to cool completely 7. Combine powdered sugar and juice in small bowl 8. Spread over each muffin; sprinkle with remaining almonds |
