Toasted Almond and Orange Couscous |

Ingredients:
1 tbs. olive oil |
1 medium onion, chopped |
1 cup couscous |
1 tsp. turmeric |
1 cinnamon stick |
1 whole clove |
1 cup fresh orange juice |
1 tbs. orange zest |
3 scallions, thinly sliced |
1/2 cup toasted, slivered almonds |
salt and pepper |
Directions:
1. Heat olive oil in a saucepan and add chopped onion. Saute until soft. Add orange juice, orange zest, turmeric, clove and cinnamon stick. Bring to a boil. Stir in couscous, cover and turn off heat. Let sit covered for 5 minutes. Remove lid and fluff with a fork. Gently stir in almonds and scallions. |
