Perfect in the morning with your favorite cup of coffee. Ingredients:
1 cup whole wheat flour |
1 cup natural bran |
1/2 cup brown sugar |
1 tsp. baking soda |
1/2 tsp. salt |
1/2 tsp. cinnamon |
1 cup shredded carrots |
1/2 cup raisins |
1 cup buttermilk |
1/4 cup oil |
1 egg |
1 tsp. vanilla |
Directions:
1. In a large mixing bowl add and stir together all dry ingredients. 2. Add carrot, raisins, buttermilk, oil, egg and vanilla and stir together until thoroughly mixed 3. Spoon into muffin tins. I use a tin with six openings, twelve could be used for smaller muffins. If using the larger pan reduce baking time by 5 minutes. 4. Bake at 375 degrees for 25 minutes or until set in the middle. |
